Today I am doing a test-run of the mini cheesecakes I am making for the wedding. Trying a couple of variations, and seeing how they hold up to being frozen and thawed.
I shall report back with my results, no matter how bad they are! Meanwhile, the whole family is looking forward to eating the evidence when they get home. ;o)

So far so good! They were relatively easy to make, and have good texture. I have a bunch in the freezer now so we can test the tomorrow.
ReplyDeleteI ended up making some with a slight lemon flavor that we will top with blueberry, and the others are pumpkin & spice. I made those up, so I hope they turn out to everyone's liking. ;o)
